Italy has a population of almost 60 million and is slightly larger than the state of Arizona. The country is a diverse nation of 20 regions with an extreme diversity of cuisine. Marinara sauce – America’s definition of Italian cuisine – is from the central part of the country, but Italy’s wide-ranging terrain and climate, long coastline, and neighboring countries all play roles in the creation of the cuisine that Italians know as their own.
The regions we will study in this class are many and the foods we try will be quite varied and delicious. My dream is that you, as students, will take home many of these recipes and share then with family and friends.
