- The main difference in Cuisine that I found from Naples to Florence was the use of seafood. Every dish that I ordered from the local restaurant we went to had some aspect of seafood. I tried the fresh cod and ravioli with shrimp. Both dishes were good; however, I do not think that I would order the cod again. I noticed that in Naples they use much more white sauce than in Florence, as every pasta dish I saw came with a white sauce instead of the common ragu that we eat in Florence. Texturally, I did not notice a large difference as I ordered pasta for my main dish. I am excited for our trip to Turin where I will try more Tuscan cuisine!
